If you don't have iPhone data recovery tool, such as iOS Data Genius, and you don't care whether content in iPhone will be lost, or you can take the risk of previous iTunes backup being overwritten due to sync, follow this method to recover deleted notes from iTunes backup. This is also a common method for iPhone user to restore data with iTUnes.
Step 1: Plug locked iPhone into computer with USB cable.
Step 2: Go to File DevicesRestore from Backup.
iPhone begins to restore data (including notes) and then restart later. In about few minutes, iPhone will be ready for you to use and you can find deleted or lost notes. However, if "Find My iPhone" service has been turned on for your iPhone, you should go to iCloud Settings on iPhone to turn it off before restoring iPhone.
But if iPhone is locked and you cannot open iPhone to close "Find My iPhone", try method 2 to recover iPhone notes.
Compared to method 1, this method will be safer and more effective to recover deleted partial data from iTunes backup. For example, you can only recover iPhone deleted notes from iTunes backup with iOS Data Genius, and keep other contents safe in iPhone at the same time.
Step 1: Run iOS Data Genius and choose Recover from iTunes Backup File mode.
Step 2: Select an iTunes backup file of your locked iPhone and click Start Scan.
From the iTunes backup file list, select one based on Device Name, Last Backup Date and Serial Number. Then click "Start Scan".
Step 3: Preview notes in iTunes backup and recover.
If you couldn't find the deleted notes you want to recover, go to home and select another iTunes backup to scan again like Step 1 and Step 2.
Step 4: Save recovered notes on computer.
After choosing a folder to save recovered notes on computer, and getting Recover successfully message, your iPhone deleted notes have been recovered.
Tips:
It is worth mentioning that iTunes backup file is the key to above two methods. However if your iTunes backups are encrypted, they would be not helpful. So at first we need to recover iTunes backup password, had better remove it before using backup to recover iPhone notes.
